LaTeX is really easy with TeXshop. It gives you the TeX code editor on one side of the screen. Push a button and you get the PDF file on the other side of the screen. And the documents look fantastic.

Papers can organize PDF files and export bibliography libraries for TeX and other apps, so you can easily work on citations and references in your project or paper. There is also a Papers for iPhone, so you can bring PDF files with you.

"Papers" looks very interesting. Also, I've never gotten the hang of LaTeX, but might give it a try at some point - I see more and more people talk about it as the way to write academic papers.

Marks,

Thanks. There is a bunch of new apps that look cool to me. Here are some of the nice ones that I use, but which are not on your list.

AppZapper - Easily remove apps and all files associated with it (incl. .plist)
Chronosync - Keeps my documents folders on my MacBook, my iMac and my job's fileserver in sync
DirSizeX - Bad interface, but tells my how big all directories are, so I can identify the big files to consider for deletion.
Disk Order - Total Commander-type file organizing
Fugu - FTP
LaTeXiT - LaTeX equation dragged and dropped in any other app as PDFs (Great for academic presentations including equations)
OnyX - Keep the OS clean
Papers - Organizes PDF-files in an iTunes-type library (great for academics)
Parallels - Running Windows, Linux etc. within Mac OS X. I use this to run remote connections to my office WinPC.
PhoneView - Access all files on iPhone
Pixelmator - Almost like Photoshop, but a lot cheaper
Resize - Mass resize photos, e.g. for photo frames
Speed Download - Great download manager
TeXshop - The best LaTeX editor
XMeeting - Not very good, but seems to be the best VoIP softphone on the Mac
